Wines From Grape Concentrates

Ingredients:

For those who prefer winemaking without the work, premium grape juice concentrates are the answer.

These concentrates are available for winemaking throughout the year.

From France, Italy, Spain, and California come premium wine grapes that normally only

the wineries have access to.

They are now freely available from the many home winemaker's stores.

Most are in container sizes to make 1 or 5 gallons of wine.

This recipe for 1 gallon of wine can be used as a general guide.

1 Can Concentrate

Water to 1 gallon

Sugar to S.G. 1.085--1.095

Acid Blend to .65% tartaric

1 tsp Nutrient

1/8 to 1/4 tsp Tannin

1 Campden Crush

1 pkg Wine Yeast

Method:

All the work of fruit preparation has been done.

Mix all ingredients EXCEPT yeast in primary fermenter

Cover primary

After 24 hours add yeast, cover primary

Stir daily and check S.G.

When ferment reaches S.G. 1.040 (3-5 days) siphon off sediment into glass secondary

Attach airlock

When ferment is complete (S.G. has dropped to 1.000--about 3 weeks) siphon to clean secondary

To aid clearing, siphon again in 2 months and again if necessary before bottling
